Sophia Davis Shrimp & Basil Linguine recipe

MQ1G8974-3And when you thought you had us figured out we feed you. Enjoy the Shrimp & Basil Linguine dish by Sophia Davis.

INGREDIENTS:
½ lb. linguine
3 tbsp olive oil
½ cup diced sweet onion
1 garlic clove minced
½ cup white wine
1 ½ cup fresh deveined and cleaned shrimp
¼ cup diced sun dried tomatoes
¼ cup parsley
¼ cup basil
1 tsp black pepper
1 tsp white pepper
1 tsp salt
½ tsp Cajun red pepper
3 tsp. butter or margarine
1 ½ cup arugula
Fresh grated Parmesan

DIRECTIONS:

For the Pasta:
Boil linguine in 3 quarts of water for 8-12 minutes.

For Sauce:
In large skillet, warm olive oil over medium heat and saute onions and garlic for approx. 2 minutes or until golden brown. Add wine and shrimp, cook for about 5 minutes or until shrimp is pink. Turn off heat. Add cooked linguine, butter, sun dried tomatoes, parsley, basil, black pepper, white pepper, salt, Cajun red pepper, arugula. Toss to combine. Serve immediately with freshly grated Parmesan.
